There are two things in this world that make me supremely happy, especially when my week is a ‘week from hell’ like this one!
Shoes & Comfort Food!!!
This week is full of seemingly endless shit I seem to be stepping into, but let me just say that right now I wish I could heal with my hands, kill with my thoughts, and just cry in a pillow while snarfing chocolate and potato chips all while losing weight.
I’m not sure why this isn’t a possibility…can anyone explain this one like I’m 5?
Note* Guys this is totally typical girl behavior, and yes it does feel like heaven when we take our bra off at home!
Anyway, I kept meaning to get on here and hand over the tonnage of recipes and reviews I have for you, and somehow I keep picturing my computer running away from me while I am noshing some serious fat-girl food instead. So, alas, my photos are piling up like a mountain while I keep the potato chips flowing freely to my mouth.
Since you are sweetly putting up with me, I have a big bowl of comfort food for you. You know, to get you through your piles of shit too!

One Pot Mexican Pasta


  • 8 oz (1/2 lb) pasta, I like shells
  • 2 tbsp. olive oil
  • 1 sweet yellow onion, chopped
  • 1/2 C frozen sweet corn kernals
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 8 oz mushrooms, sliced
  • 1 can fire roasted diced tomatoes
  • small can sliced black olives
  • 1 can black beans, rinsed and drained
  • 1 C red wine
  • 1 C water
  • 1 packet of taco seasoning
  • salt & pepper to taste


1. Put oil in pan, then place pasta in pan on top.
2. Commence dumping…put everything else in on top.
3. Cover with a lid, turn the heat to medium/medium-high.
4. Once it starts to boil, reduce to medium and continue to cook with lid on for about 8-10 minutes.
5. Serve immediately and die of happiness!


*Note: Do not remove the lid until at least the 8 minute mark as the steam helps to meld all the flavors and cook everything just right. Also, try not to dive head-first into it when you’re done as it is that good.

When I was growing up I loved Ramen. I didn’t have to wait like the masses to be a poor college kid to delight in this fine cuisine. I enjoyed it cooked with an egg a lot of mornings before school.
The other night, after the onslaught of my week from hell had begun, I was feeling a nostalgia so deep that I simply had to find me some Vegan Ramen…Guess what?
Isn’t is beautiful?  Okay, maybe that’s going too far, but I found this gem at my local Earth Fare along with 2 other flavors. It cooked up just as easily as I remember, and while nothing like the original glorious ramen of my youth, still pretty damn tasty.
So, in case you are just hankering for some ramen late one night, like I happened to be, you’ll now know you can find it, without all those nasty animal flavors, but still full of love.
  Oh, and lest you be left wanting, be here again tomorrow when I share with you the head to head comparison of Tofurkey Kielbasa to Light & Lean’s Jumbo dog. (Both covered in Daiya Cheddar, Amy’s chili, & diced sweet onion) And because I love you so much, I’m going to share my super, fabulous, get you through the week from hell homeade potato chips that…LISTEN UP….are healthy! Ssshhhh, don’t tell or you might hurt my fat-ass’s feelings.
